You don’t often hear of gluten-free breads being soft, but with this Soft Gluten Free Sandwich Bread Recipe you will get the tastiness and the softness of regular bread, but it will be gluten-free as well.

Makes: 1- 9 inch x 5 inch loaf of bread
Ingredients for Yeast Mix:
1 ½ cups of water, milk or even a milk alternative
4 tbsp. of honey
2 ½ tsp. of dry active yeast
Ingredients for dry mix:
3 cups of all-purpose, gluten-free flour
4 tsp. of baking powder
1 ½ tsp. of Xanthan Gum
1 tsp. of salt
Ingredients for wet mix:
¼ cup of olive oil
2 tsp. of apple cider vinegar (or lemon juice instead)
2 large eggs
Instructions for this recipe:
Step #1: Warm water or milk, stir in the honey, add the yeast. Let sit for about 15-20 minutes.
Mix the ingredients for the dry mix in a bowl. Mix the ingredients for the wet mix in a separate bowl. Add in the yeast mixture to the wet mix and stir.
Add the wet mixture to the dry mixture.
Mix and knead until well-blended and no longer sticky.
Step #2: Spray the loaf pan (9x5) and put the mixture into the pan. Smooth the mixture out.
Place the pan in a warm place and let it rise until it is double in bulk.
Bake in a pre-heated oven set at 350 degrees for 30 to 45 minutes or until it is golden brown.
